Menu Plan 8-2-10


 Lots of simple things my husband can do this week. We have plans a few nights this week where I'm running around close to dinner time so he needs to be able to handle it if I'm running late. Can you believe that I still have PW's chicken legs on my plan, mostly because I keep forgetting to defrost the legs.

Litte bit of stuff going on...

My baby girl has tonsillitis, so we've been dealing with the sickies around here all week.

Meals have been moved from previous week so my menu plan only had one or two different things on it this week. That is part of why I didn't post. I will be back Monday with next weeks!

If you follow my facebook you've probably seen our little friend that we have visiting...
We are just waiting it to turn into a beautiful Black Swallowtail It's been in it's chrysalis since the 7/22/10 and everything I've read says it takes a few weeks to emerge. So we are patiently waiting. I will definitely be taking pictures of the rest of the process until we let it go!

15-Minute Pasta Salad

15-Minute Pasta Salad
(Parents Magazine Aug 2010)

  • 1 3/4 dried bow tie pasta

  • 1 1/2 sliced strawberries

  • 3 ozs small fresh mozzarella balls, halved

  • Handful fresh basil leaves (shred if large)

  • 1/4 –1/3 cup balsamic vinaigrette
Cook the pasta according to the package directions. Drain the pasta and rinse well with cold water and drain again.
In a large bowl, toss together the pasta, strawberries, cheese, and basil. Add the dressing; toss again. Makes 6-1 cup servings.

We went to the Porter Peach Festival this weekend. It was crazy hot but we did get plenty of peaches to make some freezer jam! I made 2 batches which produced 12-8 oz jars. No special recipe, just what was on the Ball Instant Fruit Pectin for peach jam.

Little Bit of Scrap

Lots of new goodies at Peppermint Creative and I haven't even had to the chance to use everything yet. We have a boyish car type kit, 4th of July, Canada Day, Doctor and Dentist kits. I'll definitely have more pages coming soon, as well as a few with Digital Design Essentials goodies!

Gardein Crispy Tenders review


Sorry it's been a while since I've posted. I've had a few computer issues that caused me to do a complete reinstall. Now onto my review...

I've taken on the Meatless Mondays for a few months now and for the most part have stuck to it. We are not becoming vegan or cutting out all of those yummy things we are used to but I am trying to cut it out at least one day a week. I found out about the Gardein brand while reading "The Conscious Cook" cookbook last week and when I went to Whole Foods on Wednesday I decided to test out a few of the products to see if I could sneak these past my kids.

Here are the pros for the Crispy tenders
  • Meat-free
  • Kids ate them and liked them
  • I even ate them and liked them
  • Crisped up nicely and surprisingly nice texture
  • Good ingredients, low in fat and calories
Cons
  • Price & Quantity ($4.99 for 10 tenders)
  • Processed food 
Overall we liked them and I'm sure I will buy them again in the future. Will I make them regularly, no. First of all I can't afford them to be a weekly thing and second of all I don't buy real frozen chicken tenders regularly so I'm not buying the fake ones all the time either. I do recommend them for those also trying to cut back on meat consumption, they are a good alternative.

I also have the Chick'n Scallopini to try soon, I'll let you know how that taste also!

Tilapia with Strawberry-Thyme Sauce and Oven-Baked Polenta

This was so good tonight. I definitely see us having this again in the future. Had to add my favorite baked polenta too!

Tilapia with Strawberry-Thyme Sauce (Fresh Home Magazine Spring 2010 issue)
1 cup quartered fresh strawberries
1/2 cup white wine
1/3 cup sugar
1/4 cup lemon juice
1 fresh thyme sprig
1/2 tsp salt, divided
1 Tbsp flour
1/4 tsp black pepper
4 tilapia fillets
1 Tbsp olive oil
crumbled blue cheese and cooked bacon (I omitted)

In a small saucepan, combine the strawberries, wine, sugar, lemon juice, thyme spring and 1/4 tsp salt. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 mins or until slightly thickened. Discard thyme sprig.
Combine the flour, pepper and remaining salt; sprinkle over tilapia. In a large skillet, cook fillets in oil over med-high heat for 3-4 mins on each side or until fish flakes easily with a fork. Serve with strawberry sauce and sprinkle with blue cheese and bacon.

Oven-Baked Polenta (Everyday Food Great Food Fast cookbook)
3/4 cup cornmeal
Coarse salt and fresh ground pepper
1/4 cup milk
2 Tbsp butter
1 tsp fresh marjoram (or 1/4 tsp dried)

Preheat oven to 425°F. In a lidded baking dish, whisk together 3 cups of water, the cornmeal, 1 1/4 tsp salt, and 1/8 tsp pepper. Cover, and bake for 30 mins, stirring halfway through.
Remove from the oven, and add the milk, butter, and marjoram, and whisk briskly until smooth. Serve immediately.
